This set comes with two one-ounce jars of Regalis’s sustainably farmed Amber Kaluga and a beautiful abalone spoon, so you’ve got everything you need to make an occasion of it. The petite, slate-colored beads have a clean, briny flavor that’s nicely balanced between sweet and bright with a creamy finish. They’re delicious eaten straight from the jar, though we certainly wouldn’t stop you from bringing out the blinis. We also love that Regalis doesn’t use borax, pasteurization, or coloring agents and can trace every jar back to the individual fish. It’s the kind of set we’d be very happy to give—or receive.
