Roasted Chicken Waldorf-Like Salad

Ingredients
1 rotisserie chicken, pulled meat chopped roughly
2 celery stalks, diced small
1⁄2 cup red grapes, cut in quarters
1⁄2 cup walnuts, toasted (or another favorite nut)
1⁄2 cup coconut yogurt
1 Honeycrisp apple, peeled and diced
1 lemon
2 tbsp tarragon, or use any herb you like (basil, parsley, or dill)
sea salt and black pepper, to taste
1 avocado
1 cup arugula
2 slices rosemary-seeded bread
Directions
1. Slice your rosemary seeded bread into triangles and toast lightly until golden and crisp. Set aside to cool slightly.
2. In a small bowl, mix the chicken, celery, grapes, walnuts, coconut yogurt, apple, lemon juice, herbs, and season with salt and pepper.
3. Slice the avocado and top the seeded bread with the avocado. Top with the chicken salad. Add the arugula and drizzle with a little bit of olive oil, sea salt, and black pepper.
