We believe a great burger doesn’t have to be indulgent to be satisfying. It just has to be made with intention. This turkey burger recipe is a celebration of texture, flavor, and clean ingredients: savory mushrooms, sweet caramelized shallots, and zucchini (yes, zucchini!) folded into lean ground turkey for moisture and depth.

It’s the kind of everyday staple that feels weekend-worthy, but is simple enough to prep ahead and enjoy any night of the week

Ingredients

4 gluten-free hamburger buns

4 turkey patties

1⁄4 cup avocado oil mayonaisse

1 head gem lettuce leaves

1 vine-ripened tomato, sliced

1 red onion, sliced

12 pickle slices

For the patties

1 lb. ground turkey breast

1⁄2 cup avocado oil

6 crimini mushrooms, chopped

1 shallot, chopped

1⁄2 cup zucchini

Kosher salt to taste

Ground black pepper to taste

Directions

For the turkey patties:
1. In a sauté pan, heat the avocado oil over medium heat. Add the mushrooms and shallots, cooking slowly until the mushrooms have released all their moisture and the shallots are golden and caramelized. Let cool completely.
2. In a mixing bowl, combine the ground turkey, grated zucchini, and cooled mushroom mixture. Season generously with salt and pepper. Mix just until combined—being careful not to overwork.
3. Divide the mixture into 4 equal portions and shape into patties on parchment paper. Chill for 20 minutes to help them set.

To cook and assemble:
1. Grill the patties over high heat (around 500°F), about 3–4 minutes per side, until fully cooked through and lightly charred.
2. Toast buns on the grill until soft and golden.
3. To build, swipe mayo on both sides of the bun, then layer gem lettuce, tomato, onion, pickles, and your turkey patty. Top with the bun and serve immediately.
