Marco Borges and His 22-Day Revolution
After a summer of over-indulgence—long nights with a lot of rosé, more than our fair share of lobster rolls—we’ve been trying to get back on a more virtuous path. Enter Marco Borges, the celebrated exercise physiologist and personal trainer who is best known for his 22-Day Nutritional Challenge (which we’ve written about before). His plant-based meal and exercise plan promises to help you lose up to 22 pounds in 22 days, as it’s founded on the principle that it takes 21 days to break bad habits and form new ones. He has a brand-new, comprehensive book on the concept, full of easy vegan, gluten-free, and soy-free recipes. We tried out four—all simple to make and quite tasty.
Raw Walnut Tacos
While nothing beats the real thing, these raw, vegan tacos are pretty damn tasty.
Tomato and Avocado Salad
This salad isn’t revolutionizing the culinary world, but tomato and avocado are a classic combo for a reason. It’s a perfect light lunch or mid-day snack.
Hummus Tartine with Sprouts
This is a heartier spin on avocado toast, as it includes hummus, tomatoes, and sprouts—plus a hint of smoke from the paprika.
Carrot Cake with Cashew Frosting
Rejoice! A gluten-free, dairy-free, soy-free carrot cake that actually tastes great.
