
Zucchini Cacio e Pepe
A lightened-up, plant-based version of a classic, I might even prefer this to the original.
3 medium zucchini, spiralized
1/4 cup olive oil
1 teaspoon freshly ground black pepper
1 cup finely grated parmesan cheese
1. In a large bowl, toss the zucchini noodles with the olive oil and pepper. Add the cheese, toss to combine, and season with salt to taste.
