Vietnamese Chicken Salad


This cleansing salad is the perfect healthy work lunch—just be sure to pack your dressing on the side. If you’re doing the three day anti-bloat plan, use leftover chicken from the ginger turmeric chicken bowl; if not, rotisserie chicken works just as well.

Serves 2

for the salad:

1 ½ cups shredded chicken breast

3 cups finely chopped romaine lettuce

¼ cup chopped cilantro + extra for garnish

2 grated carrots

2 Persian cucumbers, cut into half moons

for the dressing:

¼ cup fish sauce

¼ cup fresh lime juice

1 medium shallot, finely minced

¼ teaspoon chili flakes, or to taste

5 teaspoons coconut nectar or sugar

1. Combine all the salad ingredients in a large bowl.

2. Whisk together the dressing ingredients, then toss with the salad.

3. Serve with a little extra cilantro on top.
