The Life-Changing Loaf with Pistachios, Dried Cherries, and Cardamom

To call this a life-changing loaf is not hyperbole—it really has changed my life and the lives of thousands of people all over the world who have added this high-protein, high-fiber, gluten-free, vegan loaf made with whole grains, nuts, and seeds to their diet. This exclusive version for goop features pistachios, dried cherries, and cardamom for a slightly sweet take on the classic. It’s a delicious and fresh combo for spring.

As with all versions of the Life-Changing Loaf, I recommend slicing it super thin and giving it a good toast. The oats, nuts, and seeds become golden and caramelized, making the flavors even more delicious. Spread a little (or a lot) of butter or ghee, nut butter, jam, or honey on top and enjoy.

1. Line a loaf pan with parchment paper and set aside.

2. In a medium bowl, combine all the dry ingredients, setting aside a few pistachios for garnish.

3. In a measuring cup, whisk the wet ingredients together. Pour over the dry ingredients, stirring very well until everything is completely soaked and the dough becomes thick. Transfer the dough to the loaf pan and smooth out the top with the back of a spoon. Sprinkle with the remaining pistachios and lightly press them into the dough. Let sit out on the counter, covered with a clean tea towel, for at least 2 hours, or all day or overnight.

4. Preheat the oven to 350°F (175°C).

5. Place the loaf pan in the oven on the middle rack and bake for 30 minutes. Remove the bread from the loaf pan, discard the parchment paper, place the loaf upside down directly on the rack, and bake for another 30 minutes. The bread is done when it sounds hollow when tapped. Let cool completely before slicing (difficult but important).

6. Store the bread in a tightly sealed container at room temperature for up to 5 days or in the fridge for 2 weeks. It freezes well, too—slice before freezing for quick and easy toast.
