Sweet Potato “Toast”
We’ve seen this concept popping up here and there, and we admit, we were a bit skeptical at first. Once we tried it, we totally changed our tune. This really is the ultimate gluten-free toast! We loved it with the creamy white bean dip, but it’s also great with avocado or herb-y labneh.
1 sweet potato, scrubbed clean and cut lengthwise into ¼-inch slices
1. Toast the slices of sweet potatoes in a toaster or toaster oven for two cycles, or 10 minutes. Top with desired toppings and serve.
