Salmon and Soba Noodle Bowl

1. First, make the lime-ginger marinade by mixing all the marinade ingredients. Use half to marinate your salmon the night before or at least 10 minutes before cooking.

2. Bring a pot of water to a rolling boil and cook the soba noodles according to the package instructions.

3. When the noodles are done cooking, place them into a mixing bowl and toss with some of the tahini sauce to prevent them from sticking together. (Or: Run the noodles under cold water if you prefer to enjoy your bowls chilled.)

4. Preheat the oven to 475°F. Season the salmon with salt and pepper, then roast in the oven for about 10 to 12 minutes depending on the thickness of your fish.

5. While your fish is in the oven, divide your noodles into two bowls.

6. Top your noodles with the carrots, cabbage, and cucumbers.

7. Place the salmon into the bowls and garnish with cilantro and green onions.

8. Drizzle with more tahini sauce or extra lime-ginger marinade.
