Ghetto Gastro

Use this as a finishing touch on Ghetto Gastro’s Strong Back Stew.

1. In a saucepan, heat the oil and lemongrass over low heat until the oil registers 250°F (120°C) on an instant-read thermometer. Infuse for 5 minutes, then remove from the heat and let the oil sit for 30 minutes. Slowly strain the oil through cheesecloth into a Mason jar (or other nonplastic airtight container); discard the solids. Store in an airtight container at room temperature for up to 2 weeks.
