Late July Salsa
Fresh and so easy to throw together, this salsa is awesome on scrambled eggs for breakfast, tacos for dinner, or simply eaten with chips. Nicole suggests adding corn, diced mango, black beans, or avocado if you want to mix things up a bit.
3-4 medium-large heirloom tomatoes, diced into 1/4″ cubes
½ medium onion, diced
2 garlic cloves, minced
1 small bunch of cilantro, chopped
1 jalapeño, seeded and chopped
1-2 limes, juiced
Salt to taste
1. Mix the tomatoes, onion, garlic, cilantro and jalapeño in a large bowl and stir well.
2. Juice the limes and add salt to taste.
