
Herby Chopped Salad
Once the chicken is grilled, this super fresh, Middle Eastern-inspired salad comes together in under 10 minutes.
1 cup finely chopped romaine
½ cup packed finely shredded kale
8 fresh mint leaves, roughly torn
leaves from 4 cilantro sprigs, roughly torn
8 cherry tomatoes, cut in half
½ cup diced grilled chicken breast
1 handful crumbled pita chips
for the dressing:
2 teaspooms fresh lemon juice
2 tablespoons extra virgin olive oil
salt and pepper to taste
1. To make the dressing, whisk together lemon juice and olive oil then season with salt and pepper to taste.
2. To make the salad, arrange all ingredients in a bowl or to-go container.
3. Pour over salad dressing and toss to combine just before eating.
