Green Curry Paste


We love this recipe as a base for soups, stews, and curries, but it also makes a great marinade for grilled meats and veggies.

Makes about 1 cup

4 cloves of garlic

½ stalk of lemongrass, roughly chopped

½ jalapeno (optional)

½ bunch of cilantro (stems included)

Zest of 1 lime

1 2-in. piece of ginger, roughly chopped

2 tablespoons fish sauce

3 shallots, roughly chopped

Combine all the curry ingredients in a food processor until smooth.
