
Crunchy Salad with Greener Goddess Dressing
Sure, a salad for detox doesn’t sound very original, but this one keeps it interesting. Start with super hydrating and crunchy veggies, like cucumber, snap peas, and fennel; add in some protein; and finish with a garlicky, herby dressing. It’s simple but so not boring.
1 head butter lettuce, roughly torn
6 radishes, thinly sliced
½ bulb fennel, thinly sliced
¼ cup snap peas, thinly sliced
1 Persian cucumber, thinly sliced
1 carrot, grated or shaved with a vegetable peeler
1 cup chickpeas or 1 cup cooked shredded chicken
Combine all salad ingredients and toss with dressing right before serving.
