Ceviche
This kind of tastes like guacamole with a little fresh halibut thrown in, which is probably why we could eat the entire bowl in one sitting. Be sure to cut the fish up small so the lime juice “cooks” it quickly.
1. Combine the halibut, jalapeño, lime juice, diced red onion, chopped cilantro, and a large pinch of salt.
2. Stir to combine, cover, and place in the fridge for at least 2 hours.
3. When ready to serve, add diced avocado and more salt to taste.
