This kind of tastes like guacamole with a little fresh halibut thrown in, which is probably why we could eat the entire bowl in one sitting. Be sure to cut the fish up small so the lime juice “cooks” it quickly.
½ pound halibut, cut into small dice
1 jalapeño, ribs and seeds removed and minced
½ cup fresh lime juice
2 tablespoons finely diced red onion
¼ cup chopped cilantro
large pinch of salt
1 avocado, diced
1. Combine halibut, jalapeño, lime juice, diced red onion, chopped cilantro, and a large pinch of salt.
2. Stir to combine all ingredients, cover, and place in the fridge for at least 2 hours.
3. When ready to serve, add diced avocado and more salt to taste.
