
Cashew Satay Dressing
This riff on the traditional peanut sauce somehow feels more buttery and luxurious (the secret is the mighty cashew). We love it on cold noodle salads with lots of fresh herbs and crunchy shredded veggies.
1 teaspoon grated garlic
2 teaspoons grated ginger
3 tablespoons lime juice
1 teaspoon toasted sesame oil
2 tablespoons water
¼ cup cashew butter
2 teaspoons sriracha
2 tablespoons grape-seed oil
kosher salt to taste
1. Whisk the first 8 ingredients together in a small bowl. Add salt to taste. (If the dressing seems too thick, whisk in additional water 1 teaspoon at a time until you reach your desired consistency.)
