Beet, Pine Nut, and Feta Dip
Give me a hot-pink dip and I am one happy lady. Especially when that vibrancy is from fiber- and glutamine-rich beets. This is a spread that’s just as happy dressed up for a party as it is at home in its comfies spread on toast.
1. In a high-powered blender, combine the feta, beets, pine nuts (if using), yogurt, dill (if using), lemon juice, salt, and cumin. Blend until silky smooth. Serve garnished with crumbled feta and pine nuts (if using).
