Agua de Sandia
Agua frescas are usually made with an insane amount of sugar, so we subbed cassava syrup in our version of Tacombi’s delicious watermelon agua fresca. Littles will love helping to blend the mixture and stirring in the syrup.
8 pounds seedless watermelon, rind removed and cubed
1 cup organic cassava syrup (or more to taste)
½ cup fresh lime juice
8 cups water
1. Combine all of the ingredients in a large pot and use an immersion blender to blitz until smooth.
2. Strain and serve over ice or refrigerate until ready to use.
