Relae, founded by two Noma grads and now run by Canadian chef Jonathan Tam, is the only restaurant in Denmark with an organic gold star (along with a few from Michelin) for using over 90 percent organic produce. Not strictly Nordic, you’ll see plenty of Italian and French influence. There are two set menus, four and seven courses long, that change regularly according to what’s in season. Here, the vegetables take center stage which is a welcome change from the meat-heavy dishes served by most other city restaurants. You won’t find more than three flavors on a plate, prepared simply–this is no-fuss fine dining at its very best.
