The 4 Best Vegetable Sides for a BBQ
Really good vegetable side dishes make all the difference at a BBQ, whether it’s last-minute in the backyard, a bonfire on the beach, or a more elegant dinner party. What sounds expected—slaws, potato salads, pasta salads—can be spectacular and healthy all at once. Great sides also easily expand to feed a crowd, pack nicely, and can be made in advance. We created healthy updates of four classics everyone loves: a chickpea salad with herbs, sweet roasted peppers, and bright red wine vinegar; mustardy potato salad with crisp green beans; crunchy sesame slaw; and grilled corn salad with lots of lime and cilantro.
This French-style potato salad is lighter than the mayo-laden deli standard, and it’s got great bright flavor from the mustard, shallot, vinegar, and capers. It’s hearty enough to work alongside a burger but refined enough to be served with a whole grilled fish.
