It doesn’t get much simpler than tossing stuff on a pan and roasting it. We just spruced up that approach with bold spices, flavorful condiments, and some of our favorite accoutrements (kimchi!). The Chicken, Potatoes, and Peppers with Smoked Paprika is savory, hearty, and finished with sherry vinegar for brightness and tang. Two whole roasted branzinos make for a surprisingly easy weeknight dinner—the meal should come together in under thirty minutes. Last, our meatless take on bo ssam lettuce cups for a DIY dinner: tons of roasted veggies, ginger-scallion and gochujang sauces, kimchi, and rice so you can doctor up every bite.
All you need is a pan and a plan, and you’re halfway to dinner.

When we made this in the test kitchen at goop HQ, the intoxicating smell of smoky paprika, onions, and rosemary had everyone walking by to see what was cooking. This dish certainly works as a one-pan meal, but a simply dressed side of arugula would round it out nicely.

We love the traditional pork bo ssam and wanted to try a meat-free version that still carries those savory, spicy flavors with some crispy texture. Here we did a combination of tofu, cauliflower, and eggplant, but you could change it up with almost any sturdy roasting vegetables you have on hand.
