Screw Everything
So here’s what happened: We ordered a Hemsley + Hemsley spiralizer (exclusive to goop here in the US) to test their noodle pot recipes, and then we fell hard for the kitchen contraption. It offers all the joys of pasta, with none of the guilt: We made perfectly tender yet crunchy zucchini linguine, butternut squash for roasting, sweet potatoes for curly fries, and carrots, beets, and zucchini for salads. We even spiralized an apple, which we learned is a great way to get kids to eat fruit—it was devoured in seconds. Below, four new recipes.
Zucchini Linguine with Fava Bean Pesto and Grilled Shrimp
Make this dish in early spring when fava beans are tender and abundant.
Zucchini Salad with Arugula, Mint and Lemon
If you’re making this for a party or a picnic, you can prepare everything in advance; just don’t dress with lemon juice and olive oil until right before serving.
Chicken and Zucchini Noodle Pho
This is crazy good. It’s healthy, it’s quick to throw together, and you won’t even miss the rice noodles. Promise.
Green Papaya-Style Salad
This Thai-inspired salad makes a perfect side for sautéed noodles or roasted salmon. Don’t skimp on the fresh herbs—they really pull the dish together.
