
No-Cook Cooking
When it’s this hot, turning on the oven or standing over a BBQ isn’t very appealing, so we came up with some easy no-cook recipes. They’re all quick, healthy, and require only a cutting board and a good sharp knife.
Summer Panzanella
Make this, grab a rotisserie chicken from the grocery store, and call it a day. Be sure to use stale baguette for texture, or toss torn fresh baguette in a hot pan, oven, or toaster oven to crisp it up a bit (we know, we know, it’s breaking the no cook cooking rules, but the slight crunch is essential).
Ceviche
This kind of tastes like guacamole with a little fresh halibut thrown in, which is probably why we could eat the entire bowl in one sitting. Be sure to cut the fish up small so the lime juice “cooks” it quickly.
Tuna Poke
We’re totally on board with the surging poke trend, but eating raw fish of unknown provenance and freshness can always be a little dubious. This is better than anything you can find at a poke shop and it only takes 5 minutes to make.
Tomato Salad with Tuna, White Beans & Salsa Verde
We could eat salsa verde on pretty much anything, and it’s particularly good on this tomato and white bean salad. Serve with crusty bread to sop up all of the lovely juices.
