Meatless Monday: Sweet Potato Taco with Salsa Negra
Easy, vegan, and incredibly delicious: the magical culinary trifecta that doesn’t exist. Except that it does. These tacos are our new default no-time-to-cook weekday recipe—and man, do they deliver. Salsa negra typically involves time and effort roasting chilies, combining them with an unrefined Mexican cane sugar called piloncillo, then mixing in garlic, spices, and vinegar to create the super rich, sweet, spicy, and pleasantly tangy sauce that’s brilliant with roasted or grilled meats. Not only is our update meat-free but it comes together in half the time. The trick is store-bought chipotle chilies in adobo sauce, plus blackstrap molasses. The resulting tacos are so satisfyingly rich and hearty, you’ll end up going meatless more often than Mondays.
