Our delicious, healthy, no-cook, #meatlessmonday mezze platter is a brilliant, convivial way to start the week. In the spirit of The Kitchen Healer, who taught us the power of chopping stuff up and putting it out on a board, all you need to do is grab some fresh, premade dips and spreads at the grocery store. (If you’ve got a Middle Eastern or Mediterranean market in your neighborhood, now’s the time to make some friends behind the counter.) One you’ve got your dips, toast some flatbread, and cut it into triangles or strips (chef’s choice). Then cut up some vegetables, and top them with a squeeze of lemon, chopped parsley, a glug of good olive oil, and flaky sea salt.
