Christmas morning is the best kind of chaos—and after the wrapping paper and ribbon is cleaned up, there’s nothing better than sitting down to a big festive meal that doesn’t require a ton of prep. These recipes are all gluten-free, reasonably healthy, and if you do a tiny bit of work the night before, can be thrown together in under 30 minutes.
It seems like every brunch place in LA and NYC has a version of these on the menu, and why not—they’re almost always irresistible. Here is our easy, gluten-free version topped with honeyed crème fraîche whipped cream and blueberries. Make the batter the night before so it’s ready whenever you are the next morning.
This amped-up avocado toast loaded with healthy fats, leafy greens, carbs, and tons of protein will give you the fuel necessary to get through any busy day, including Christmas. Plus the bacon, kale and egg can all be cooked in the same pan, making clean-up a cinch.
Easy and elegant, this frittata can be served hot out of the oven or at room temperature. You can even make the frittata mixture the night before, just be sure to let it come up to room temperature before cooking. We like to serve this right out the cast iron skillet it’s cooked in, but feel free to transfer it to a platter instead.
