Mornings can be chaotic, but when you’ve got a busy day ahead of you, there’s nothing like starting it off with a hearty, nourishing breakfast. The four recipes below are both gluten-free and deliciously satisfying—and if you do a tiny bit of prep the night before, you can throw them together in under 30 minutes.
It seems like every brunch place in LA and NYC has a version of these on the menu, and why not—they’re almost always irresistible. Here is our easy gluten-free version topped with honeyed crème fraîche whipped cream and blueberries. Make the batter the night before so it’s ready to go first thing in the morning.
This amped-up avocado toast—loaded with healthy fats, leafy greens, carbs, and tons of protein—will give you the fuel necessary to get through any busy day. Plus, the bacon, kale, and egg can all be cooked in the same pan, making cleanup a cinch.
Easy and elegant, this frittata can be served hot out of the oven or at room temperature. You can also make the frittata mixture the night before (just be sure to let it come up to room temperature before cooking). We like to serve this right out of the cast-iron skillet it’s cooked in, but feel free to transfer it to a serving platter instead.
