
Apples Are in Season—Here’s What to Do with Them
At his celebrated Beverly Hills restaurant Maude (which is currently one of the hardest reservations to snag in Los Angeles), Curtis Stone and his team create an elaborate tasting menu centered around one seasonal ingredient every month. This month, it’s apples, which means diners will find the fruit incorporated, in some way, into each perfectly orchestrated course. Eating at Maude is a pretty rarefied experience, and while apple foams and gelées have their place, we’re pragmatists here at goop. With that in mind, we asked Stone what he does with apples when he’s off-duty, cooking for his family at home. Below are four of his favorite recipes, all of which are fairly simple to create, seriously tasty, and don’t require any special equipment.
