4 Easy Crockpot Recipes
It makes getting healthy, delicious dinner on the table about 6 zillion percent easier, so we have no trouble finding uses for the time-and-effort-saving miracle that is the crockpot year-round. But it’s right about now – as the days get shorter and the temperature dips drastically – that it begins to occupy a nearly permanent place on the kitchen counter. Because there’s really nothing better than returning home to a bubbling pot of something fantastic, we created these four new crockpot recipes (recipes from winters past, here) to help keep you warm all winter.
Crockpot Apple Cobbler
A cobbler in the crockpot may sound odd, but trust us; this dessert will make you a believer. The crispy edges, buttery cobbler topping, and subtly sweet apple filling just might make this your new favorite fall dessert.
Crockpot Moroccan Chicken
This braised chicken dish is stupid easy to make but thanks to the mix of spices tastes incredibly complex. We love this spooned over cauliflower, but it would also be delicious over rice, couscous, quinoa, or whatever grain you have on hand; just make sure to eat it with something that will soak up the lovely juices.
Crockpot Veggie Chili
This chili, inspired by the one in GP’s first cookbook, gets a little added sweetness and lovely texture from sweet potato. Popular among kids and adults alike, this is perfect party food.
Crockpot Turkey Meatballs
Is there anything better than spaghetti and meatballs for dinner on a cold, autumn evening? These simmer all day so the only thing you have to do is cook the pasta (or polenta) when you get home. If you’re doing these during the week, follow the directions through step 6 the night before, then finish in the morning.
