A sick toddler means a quiet crafternoon at home instead of our usual weekend outings. Oh, and when did crayon colors get so good? // #goopholidaysurvival #yourholidayboxed @goop @boxedwholesale @paypal

I made some banana bread earlier (which my kids consumed at a rapid pace) in cooperation with @goop @boxedwholesale and @paypal. It’s a healthy, but delicious version using coconut flour and no added sugar.

    4 mashed ripe bananas

    4 eggs (or flax eggs)

    4 tablespoons grass-fed butter
    1/2 cup coconut flour

    1 tsp cinnamon

    1 tsp baking soda

    1 tsp baking powder

    1 tsp vanilla

    1 tsp sea salt

Preheat oven to 350°F. Mix eggs, banana, and butter. Add your dry ingredients and vanilla, mix well.
Use parchment paper or grease bread pan, even pour in batter.
Bake for 50-55 minutes, flip upside down, and let cool.
Serve alone, with grass-fed butter or cream cheese!

What do you do with all the leftovers? Make a soup out of the rest of the roasted root vegetables and apples. Just blend them with some vegetable stock, and let cook for 30 minutes. #goopholidaysurvival

The best part about this green bean bundles recipe? It can be assembled ahead of time. #goopholidaysurvival

    8 thick bacon slices
    3/4 stick unsalted butter, melted
    1 1/2 tsp. kosher salt
    3/4 tsp roasted garlic powder
1 1/2 lb green beans, trimmed and blanched
1/4 cup firmly packed light brown sugar

Preheat an oven to 350°F. Line a baking sheet with parchment. Cook bacon until beginning to brown, but still pliable. Transfer to a paper-towel lined plate, let cool, cut each slice in half crosswise. In a small bowl, whisk together the butter, salt, and garlic powder. Divide the green beans into 16 equal portions, about 6 beans each. Gather each portion into a neat bunch and wrap a half slice of bacon around the center to hold the beans together. Sprinkle the brown sugar evenly and drizzle with the butter mixture. Roast until the bacon is cooked through and browned, 20 to 25 minutes.

This recipe came from the Williams-Sonoma Test Kitchen.
