Serve with the Heirloom Tomato Salad, or as a simple relish on tacos, salads, etc.
This is a key ingredient in our summery Heirloom Tomato Salad.
1 large shallot, sliced
1/2 cup of apple cider vinegar
1. Stir sugar and salt into the apple cider vinegar until dissolved.
2. Add shallots to the vinegar mixture and let sit overnight.
Inspired by Thai street dish "Som Tam," we use ripe papaya (easier to find stateside) instead of the raw green papaya found in the Thai version and skip the dried shrimp. This is ubiquitous on the city streets, usually served with a side of sticky rice.
