Perfectly Cooked Brown Rice
The name says it all.
1 cup short-grain brown rice
1 3/4 cup water
1. Rinse or soak the brown rice before cooking.
2. Place the brown rice, water and a hearty pinch of salt in a large pot over high heat. Bring to a boil, then lower the heat to a simmer. Cover and cook for 45 minutes, until all the liquid is absorbed.
3. Turn off the heat, place a dry paper towel between the pot and the lid, and let sit for at least 5 minutes. Fluff with a fork before serving.
This recipe is quick, easy and most importantly delicious! I know it’s still winter in most of the US but it feels like summer here in California and this is the perfect meal to eat on a warm sunny day.
