Perfectly Cooked Brown Rice
The name says it all.
1 cup short-grain brown rice
1 3/4 cup water
1. Rinse or soak the brown rice before cooking.
2. Place the brown rice, water and a hearty pinch of salt in a large pot over high heat. Bring to a boil, then lower the heat to a simmer. Cover and cook for 45 minutes, until all the liquid is absorbed.
3. Turn off the heat, place a dry paper towel between the pot and the lid, and let sit for at least 5 minutes. Fluff with a fork before serving.
We're into the coconut, sesame, sriracha combination on the salmon and kale. We also love anything that can be cooked in one pan. We omitted the sweet potatoes, as we found the rice was an ideal amount of starch.
