Perfectly Cooked Brown Rice
The name says it all.
1 cup short-grain brown rice
1 3/4 cup water
1. Rinse or soak the brown rice before cooking.
2. Place the brown rice, water and a hearty pinch of salt in a large pot over high heat. Bring to a boil, then lower the heat to a simmer. Cover and cook for 45 minutes, until all the liquid is absorbed.
3. Turn off the heat, place a dry paper towel between the pot and the lid, and let sit for at least 5 minutes. Fluff with a fork before serving.
This congee or rice porridge is incredibly easy to digest and very soothing to the digestive system. The cooking process does all the digesting for you so your stomach does not have to work, a feel good for your stomach. The red dates are available at your local Chinese grocer....
