Here’s our recipe for the ultimate, refreshing Mexican cocktail.
1 Corona (or a similar light beer)
1/2 cup Bloody Mary mix
coarse salt in a shallow bowl
1. Rub lime on rim of each glass and dip in coarse salt to coat.
2. Add a handful of ice to each glass. Pour half a beer in each glass and add about 1/4 of a cup Bloody Mary mix. Stir to combine.
We roast the squash separately for this spiced chili as the rich flavor of the roasted butternut is too good to skip. If time is short and you want to throw the squash in at the start to boil with the dry beans, that’s fine too.
