Creamy Tricolore Salad

This quick and easy salad really delivers on flavor. The bitterness of the greens is perfectly balanced by the creamy, bright, savory dressing.

Serves 4-6

for the dressing:

1 tablespoon crème fraîche

1 tablespoon olive oil

the juice and zest of ½ lemon

½ garlic clove, grated

1 tablespoon chives, chopped

½ teaspoon salt

¼ teaspoon black pepper

 

for the salad:

2 cups baby arugula

1 cup frisée

1 cup radicchio

1. Whisk together the dressing ingredients, set aside.

2. Combine the three lettuces in a large bowl and toss with the dressing.

3. Finish with salt and pepper to taste.
