Apple Cinnamon Oatmeal
A detox version of a classic, this one relies on the natural sweetness of apples and dates to approximate that comforting taste of childhood.
1 medium fuji apple, cored and cut into ½-inch pieces
2 tablespoons + 1 ½ cups water
1 teaspoon coconut sugar
1 pitted date, finely chopped
¼ teaspoon ground cinnamon
½ cup gluten-free oats
¼ teaspoon salt
2 tablespoons toasted chopped walnuts, to serve
1. Combine diced apple, water, coconut sugar, chopped date, and cinnamon in a small saucepan over medium heat. Bring the mixture up to a simmer, lower the heat to low, cover, and simmer for 5 minutes.
2. Add the oats, remaining 1 ½ cups water, and the salt, and simmer over low heat, stirring often, for 10 minutes. Add more water or a little almond milk if you like a slightly looser texture.
3. Transfer to a bowl and top with toasted chopped walnuts, a pinch of coconut sugar, and a pinch of cinnamon.
