Four Easy, Beach-Picnic-Ready Recipes
Nothing says summer like a day at the beach, but coming up with a menu that’s both portable and delicious can be tricky. Here, we put together some recipes that are fairly easy to prep and perfect for alfresco dining. If you’re bringing the whole family, we recommend throwing in some easy pesto pasta and sliced watermelon for dessert. Pack up a cooler bag and some enamel or disposable serving dishes (we’re currently into these chic compostable ones out of Japan) and you’re set.
Spiralized zucchini makes a great base for a packable salad. In this version we toss it with sweet cherry tomatoes, grilled corn, mozzarella cheese, and a vibrant fresh herb and arugula dressing.
We always crave something salty and crunchy at the beach, and these sweet potato chips really hit that particular spot. Served with a simple, pesto-inspired white bean dip, this combo is great as a stand-alone snack or part of a larger spread. Keep an eye on your chips as they cook—every oven is a little different, and you want them to be crunchy, not burned.
